Buffalo Blue Cheese Chicken Loaf

Ingredients
2 lbs ground chicken breast3 slices lite wheat bread, dried & processed to crumbs1/2 cup oats3 egg whites2 tbsp Franks Red Hot Sauce2/3 cup blue cheese crumbles (optional)or 2-3 tbsp lite blue cheese salad dressing1/4 cup chopped onions1/4 cup finely shredded carrots1/4 cup finely diced celerySalt & Pepper to taste
Directions
Preheat oven to 350 degrees. Coat large sized muffin tin or individual sized loaf pan with non stick cooking spray.

Mix together all ingredients, (if mixture seems to dry, you may need to add a tiny bit of milk or water to moisten, as you mix)
Thoroughly mix and season with salt & pepper

Spoon equally into to muffin/loaf pan.
Bake for 25-30 minutes until toothpick inserted in center of one loaf comes out clean (or use meat thermometer)

    This was delicious, it cooks a bit dry so next time i think i will put pot of water in the oven with it. Also i spiced the meat a bit more. But overall it was a hit in my house! - 3/3/09

    Oh so super tasty! I did find that they made 15 good size muffin cups but wow! Hubby loved them, kids tolerated them (but what else is new). Fabulous spices (although I did add garlic and a splash of balsamic as I love it). thanks for sharing. I will most certainly make again!! - 2/23/09
