Parmesan crusted pork tenderloin

Ingredients
1 lb. pork tenderloin1/2 cup fresh grated parmesan cheese3 cloves minced garlic2 tsp coarse salt1 tbsp extra virgin olive oilFresh herbs, chopped (I use the tube of Italian herbs found in the produce dept)
Directions
Preheat oven to 425 degrees. Rub garlic, salt and fresh herbs into pork tenderloin. Preheat a skillet to medium high heat and add olive oil. Brown pork tenderloin on all sides. Remove from skillet.
On a piece of wax paper or a plate, turn tenderloin into parmesan cheese. Put back in skillet (if oven safe) or a shallow baking dish. Place in preheated oven. The last 5 minutes of cook time I like to put on high broil to get it extra crusty.
Cook time is an estimate. Cook to an internal temperature of 155 degrees and remove from oven to let sit for 5 minutes. Slice and serve. Serves 4- 4 oz servings.

    FYI your recipe is missing the oven cook-time. My variation: I omitted the salt. I tossed the pork tenderloin in a bag with the seasonings to marinate while at the gym. Seared as instructed, rolled in parm, then cooked in a 375 oven for 20-25min to 145 degrees & rested it for 6 min prior to serving - 4/2/13
