Muesli for 2

Ingredients
1 cup rolled oats7 walnut halves, chopped6 whole dried apricots, snipped into pieces the size of peas1 tablespoon dried cherries, snipped in halves1 tablespoon raw pumpkin seedswater1/2 cup unsweetened soymilk
Directions
Put the rolled oats, dried fruit, pumpkin seeds and walnuts in a soup bowl and cover with water--there should be about 1/4" water above the cereal. Cover and let soak overnight. In the morning, add the soymilk and serve.

Makes (2) 1 cup servings.
