Brown Rice and Lentil Casserole

Ingredients
- 3/4 cup canned Lentils- 1.2 cup Brown Rice- 3/4 cup chopped Onions- 1 1/2 cup low sodium chicken broth- 1/2 tsp Rosemary- 1/2 tsp Sage- 1 tsp Oregano- 1 tsp Garlic powder, 1 tsp (remove)- 1 cup of shredded low fat Cheddar
Directions
- preheat oven to 350 degrees

- combine all ingedients in a oven safe baking dish.

- cook for 60 mins covered

- sprinkle on cheese and cook for another 5 - 10 mins, just to melt the cheese.

    What I liked best about this dish is that it is very satisfying and filling. I used low fat Swiss cheese, since that is what I had on hand. - 4/20/13

    I make this all the time with dry lentils, 3 cups water with a packet of dry onion soup mix, 1 T Italian seasoning and a few dashes of garlic powder. everything else is the same. the kids like it mixed with hot sauce and ranch salad dressing. - 11/22/10
