Ingredients
Two chicken breasts (or more)1 Can of black beans1 Can of diced tomatoesAbout 2 Cups of frozen cornA small can of green chili peppersAbout half a cup of chopped onion1 Packet of taco seasoning***I sometimes substitute the tomatoes with a small can of salsa. There are a lot of substitutions that can be made with this. I throw in some green peppers too, just to fill it up.
Directions
I use my slow cooker for this recipe, and that is why the cooking time is not accurate. I put two chicken breasts at the bottom of the slow cooker, then I pour all of the other ingredients over the chicken. More of the ingredients can be added to taste, or if you have a big family. I let this sit in the crock pot for 6-8 hours on low. When its ready, I shred the chicken. I spoon a few spoon fulls of this into a flour tortilla with lots of lettuce, tomato, and olives. This could be served over lettuce and tomato as a taco salad too if you want to get rid of the calories in the tortilla. It makes about six cups, give or take how you prepare it.
