Ingredients
1 pkg frozen spinach, thawed and squeezed dry1 cup egg substitute1/2 cup FF cheddar cheese1/2 c FF milk1/2 cu[ fresh mushrooms, dicedsalt and pepper
Directions
combine all ingredients,pour into 10 inch pie plate sprayed with nonstick spray. cook at 350 for 45 minutes or until knife inserted in center is clean

    We're snowed in and I'm going to make this today since I have all ingredients, however I am going to use a frozen pie crust since I DO love a good pastry crust!!! I will also add a little salt & fresh ground black pepper. - 3/2/09

    Really easy and delicious ! I used onions, green peppers and carrots instead of spinach. I also added choppedup fat free hot dogs (I know it sounds weird, but it was good).

    OH! Even though I've not made this yet, I am going to rate it very good, since it is almost zero in fat grams. I will make it this weekend, since I need to get some mushrooms. I'll probably add a litte nutmeg and onions to it. - 1/15/09
