Potato soup

Ingredients
3 slices bacon1 cup chopped carrots4 oz. chopped green chilies1 cup chopped onions1 tsp. garlic salt1/2 tsp ground cumin5 cups diced peeled potatoes2 -14.5 oz. cans chicken 98% fat free broth1/2 tsp. salt1/3 cup flour2.5 cups 2% milk8 oz. 2% milk cheddar cheesegreen onion tops
Directions
in large pot cook bacon until crisp. transfer to paper towel and set aside. Discard all but 1 Tblsp. of fat. Add carrots, chilis, onion, garlic and cumin, saute until golden brown. Add potatoes, chichen broth and salt. Bring to a boil. Reduce heat to simmer, coverl pot and cook for 25 minutes or until tender. IN bowl, gradually whisk milk into flour mixture is smooth. slowly whisk milk mixture into soup. Cook over med heat, stirring occasionally, until soup thickens, about 12 minutes. Crumble reserved bacon and chopped green onions

    Very good and filling. However, I wanted to point out that the calories per serving are off by 40. This recipe was calculated with cottage cheese and not shredded cheese like the recipe says. It is actually 200 calories per serving not 156. Still low cal but just a little more. FYI - 2/8/11

    Sorry, add cheese to the soup as the last ingredient after the milk and flour mixture.

    I really like this soup! I did not use bacon as my boyfriend does not eat pork, but it turned out much better than expected. I did however add a little red crushed pepper to give it a little kick! - 6/18/10

    I made this soup several times and it wonderful. I skipped the bacon each time. However the sodium content is pretty high ~ not good for someone trying to stick to a low-sodium diet!

    I skipped the bacon, used a touch of dried red pepper instead of the chiles, and, as others have mentioned, used fresh garlic. I also used 4 0z sharp chedder, and added a couple tablepoons of dried parsley to get some green in there. Really tasty - will make it again! - 3/13/09

    I made it with 1% milk. I might improvise for the next time - maybe add some ham :-) Also, I didn't use the garlic salt, I used fresh garlic. Excellent! - 2/8/09
