eggplant thick sauce

Ingredients
1 unpeeled eggplant, chopped into small cubes1 cup chopped onions1 cup chopped bell pepper1 cup shredded carrots1 stalk celery (large)1 cup chopped mushrooms3 cloves chopped garlic2 Tbsp olive oil1 10oz package frozen spinach(chopped and thawed)1 6oz can tomato paste6 oz water6Tbsp A1 sauce or BBQ saucedash black pepperdash salt
Directions
saute onions, celery and carrots for 3 minutes in olive oil on med.. Add rest of chopped veggies and saute 5 minutes. add other ingredients and simmer for 10 minutes. Stir occasionally. you may serve on buns or mix with any cheese and stuff manicotti, or use as a base for other sauces.
