Ingredients
3/4 cup all-purpose flour3/4 cup whole wheat flour3/4 cup Splenda or other sweetener1/2 teaspoon salt2 teaspoons baking powder2 teaspoons ground cinnamon1/3 cup unsweetened applesauce1 egg2/3 cup 1% milk3 small apples (peeled, cored, and chopped)
Directions
* Preheat oven to 400 degrees F
* lightly spray muffin pan with cooking spray
* Mix all-purpose flour, whole wheat flour, splenda, salt, baking powder, and cinnamon in a large bowl
* In a separate, small bowl, mix together the applesauce, egg, and milk.
* Pour applesauce mixture into flour mixture and stir until just blended (don't over-stir); fold in apples
* Spoon mixture into muffin pan
* Bake 25 minutes

Makes 12 muffins....1 muffin = 1 serving

    Excellent! Mine were light & not heavy at all. I added about 1/2 cup dried cranberries to them. Smelled so good while they were baking. Diabetic hubby (also in SparkPeople) will flip over these! - 10/5/09

    These came out very good and are a decent size. Lots of apple pieces. Like most whole wheat baked goods a bit denser and drier so may try adding a bit more apple sauce. - 6/22/09

    haven't tried -these yet. here are a few tips. For less dense muffins ,use WHITE WHOLE WHEAT FLOUR ,works for cookies-could use halfwhite flour and White whole wheat.
    For muffins to rise better [esp. usinf Splenda] Heat oven 425. Then after placing muffins in oven ,lower to temp recipe says. reply - 10/20/10

    This recipe was very good. I had it for breakfast this morning. It made exactly 12 good size muffins. I used sugar instead of splenda to make it sweeter but it did up the calories to 117 per muffin. Still not bad for a breakfast! - 2/20/10

    Oops! Sorry, thanks for noticing and letting me know...it's fixed now =)
    I have used 100% whole wheat but it doesn't rise as well and is more dense, but if you want to do it that way it still tastes good

    These were pretty good! Though mine didn't rise and were very dense, I'm thinking maybe because my baking powder is expired. I got 16 regular sized muffins. My only complaint is the after taste from the Stevia I used. It was very strong. But that's not the recipe's fault. I just don't like that fake - 2/10/17
