Cinnamon Apple Muffins

3/4 cup all-purpose flour3/4 cup whole wheat flour3/4 cup Splenda or other sweetener1/2 teaspoon salt2 teaspoons baking powder2 teaspoons ground cinnamon1/3 cup unsweetened applesauce1 egg2/3 cup 1% milk3 small apples (peeled, cored, and chopped)
* Preheat oven to 400 degrees F
* lightly spray muffin pan with cooking spray
* Mix all-purpose flour, whole wheat flour, splenda, salt, baking powder, and cinnamon in a large bowl
* In a separate, small bowl, mix together the applesauce, egg, and milk.
* Pour applesauce mixture into flour mixture and stir until just blended (don't over-stir); fold in apples
* Spoon mixture into muffin pan
* Bake 25 minutes
Makes 12 muffins....1 muffin = 1 serving

haven't tried -these yet. here are a few tips. For less dense muffins ,use WHITE WHOLE WHEAT FLOUR ,works for cookies-could use halfwhite flour and White whole wheat.
For muffins to rise better [esp. usinf Splenda] Heat oven 425. Then after placing muffins in oven ,lower to temp recipe says. reply - 10/20/10

Oops! Sorry, thanks for noticing and letting me know...it's fixed now =)
I have used 100% whole wheat but it doesn't rise as well and is more dense, but if you want to do it that way it still tastes good

These were pretty good! Though mine didn't rise and were very dense, I'm thinking maybe because my baking powder is expired. I got 16 regular sized muffins. My only complaint is the after taste from the Stevia I used. It was very strong. But that's not the recipe's fault. I just don't like that fake - 2/10/17

I have not tried the recipe yet, but I want to. My question is if you would know if there would be any difference in calories between using the 1% mild and using skim milk? I am wondering because I follow weight watchers. Please write back ASAP. Thank you! KimAhner@aol.com - 5/31/10
