Baked Potato Kale Soup

Ingredients
1 T extra virgin olive oil1.5 c Carrots chopped1 c Celery chopped1 c Onions chopped 10 c Water, filtered tap1 large Baked Potato, with skin 3" to 4-1/4" dia. .5 tsp Black Pepper fine ground12 c Kale chopped 1 tsp Salt
Directions
put 6qt heavy bottom soup pot on med low heat
add olive oil, celery, carrot and onion
saute until tender
add black pepper and baked potato (3/4" cubes)
stir
add chopped kale
add salt to taste
add water increase heat to bring to simmer and then reduce heat to low
simmer until kale reaches desired tenderness
