Modified Cottage Cheese Oatmeal Banana Pancakes

Ingredients
1 cup oatmal1 cup lowfat cottage cheese1/2 small ripe banaa6 large eggs, separated1 tsp baking powder1 tsp vanilla1 tsp nutmeg2 T flaxseed2 T protein powder1/2 cup nonfat milk1 T canola oil
Directions
Separate eggs. Beat egg whites until stiff.
Blend the rest of the ingredients in a blender until smooth (start with blending the flax seed and protein powder in a dry blender until it is like a fine meal, then add the rest of the ingredients, except for the egg whites.) Turn mixture into a bowl and fold in the egg whites. Cook on a griddle, pressing down the pancakes when you flip them to make sure they are cooked through. Serve with an all fruit jam (like simply fruit) that has been heated to a pourable consistency.
