Chicken Spinach and Soba Miso Soup

Ingredients
Ingredients:1/2 lb dried soba noodles4 cups of chicken stock or broth2 cups of water1/4 cup miso (Red, White or Yellow)1 tsp ginger (freshly grated or from a jar)1/2 pound boneless-skinless chicken breast cut into thin strips2 cups packed baby spinach leaves (or regular if you cannot find baby)2 spring onions thinly sliced
Directions
Cook soba noodles by package directions until just tender. Set aside.

In a large saucepan over med-high heat, combine the stock, miso, water and ginger. Whisk together and bring to a simmer, then lower the heat and simmer until miso is completely disolved. This usually takes 3-4 minutes.

Add the chicken strips and cook until the chicken is white (usually 2-3 minutes). Add the spinach and cook about 1 minute. Add the spring onions and cook for 1 minute longer.

Divide the soba noodles evenly into bowls and ladle the soup over top. Best if served immediately.

    I love how fast this recipe was. I also used low sodium chicken broth so perhaps that helped cut down on some of the sodium that the miso adds. - 12/13/10
