Roasted Zucchini with Potatoes

Ingredients
2 medium zucchini (cut in chunks)2 small red potatoes (Diced small)1/2 red pepper (Diced large)1 medium onion (Diced)1 tblsp minced garlic1.5 tblsp olive oildried or fresh basilsalt & pepper 1 tblsp grated Asiago cheese (optional)
Directions
Toss all ingredients except cheese in a bowl.
Spread on a parchment lined baking sheet & roast at 375 (in a convection oven) or 400 (in a standard oven) until potatoes are tender. Spinkle cheese over in last few minutes.
