Broccoli & Beef

Ingredients
1 1/2 lb Lean beef, thinly sliced2 - 10 oz can Cream of mushroom soup1/4 tsp ginger5 Garlic clove, minced4 c chopped broccoli2 c diced carrots2 c chopped onion2 c chopped bell peppers, any color
Directions
1. In a pot, cook beef over medium high heat until no longer pink inside, adding water if needed to stop burning to pot.
2. Add mushroom soup and vegetables; bring to a boil.
3. Reduce heat and simmer for about ten minutes, stirring often, until sauce thickens & veggies are tender crisp, adding water if the sauce gets too thick.
Add soy sauce to taste.
Serve over rice or noodles, makes 8 servings.
