Low Fat & Carb Veggie/ Ground Turkey Casserole

Ingredients
2 medium tomatoes2 medium zucchini2 medium garlic cloves1 large onion12 oz 93% FF Ground Turkey1 cup tomato sauce2 cups cottage cheese (FF).5 cup low fat shredded cheddar cheese1 TBSP parsley, oregano, or rosemarysalt & pepper to taste
Directions
Preheat oven to 500 degrees

Slice tomatoes and zucchini, place on baking sheet sprayed with cookie spray and roast for 10 to 12 minutes.

Meanwhile, brown ground turkey in skillet. Add onion and garlic. Add sauce and let simmer.

Whisk together cottage cheese, egg yolk, cheddar cheese and seasonings in separate bowl.

Spread ground turkey mixture in large shallow baking dish (9 x 13 pan), top with roasted vegetables, then spoon on cheese mix over top. Reduce oven temp to 350 and bake about 35 minutes. Cut into 9 slices.
