Ingredients
2 cups sugar6 large eggs 1 tsp vanilla extract1 cup canola oil6-8 cups flour3 tsp baking powderblueberry pie filling or other jam/jelly/filling
Directions
mix sugar, eggs, oil and extract. Add baking powder and then flour until dough is soft but not sticky. Usually takes closer to 8 cups, sometimes more (nutritional information calculated for 9 cups).
Roll out dough, cut with glass to circles with 2.5 inch diameter. Place 1/2 tsp of filling in the center of the circle. Fold edges over so that a triangle is formed (pinch 3 corners). Bake at 350 degrees on ungreased cookie sheets for about 10 minutes or until lightly browned on top. This recipe makes about 115 cookies.

    I made this for a thanksgiving treat and added pumpkin pie filling. Friends just loved them and because I used splenda instead of sugar.. I had a lower calorie level on my version. A fun and tasty treat. Thanks for sharing the recipe. - 10/9/07
