chicken enchiladas

Ingredients
1 can red or green enchilada sauce8 small flour torillas8oz. low fat cheddar cheese(mild or sharp)16 oz boneless skinless chicken breast1 can green chiles3/4 tbls cumin1 tbls chili powder1/4 tsp salt or to taste3/4 tsp garlic powder or to taste
Directions
Season chicken with salt, garlic powder,chili powder, and cumin. Cook in skillet on med high heat with chiles.
Pour 1/2 enchilada sauce in bottom of greased 13x9 cassorole dish.
Shred cooked chicken and add to 6oz of cheese to make mixture for inside torillas.
Roll mixture into torilla and place seam side down in the greased cassorole dish. Top with remaining sauce and cheese. Cover and bake at 425 for 10 min. Uncover and cook for another 10 mins.
Alternatives:
Switch red sauce for green sauce and add fat free cream cheese to the mixture for a change. Also tried with adding corn and black beans. Also serve with seasoned brown rice.
