Lynda's White Chicken Chili

Ingredients
1 tbsp. olive oil3 lbs. boneless, skinless chicken boobs, chopped1 large onion, chopped3 cloves garlic, minced2 14-oz. cans chicken broth4 15.5 oz. cans canellini beans2 4-oz. cans diced green chilies1 tsp salt1 tsp ground cumin3/4 tsp dried oregano1/2 tsp chili powder1/2 tsp white pepper1/8 tsp ground cloves1/8 tsp cayenne pepper2 cups frozen corn2 cups shredded monterey jack cheese
Directions
Heat oil in large pot over medium heat. Add chicken, honions and garlic and saute until chicken is lightly browned - 5-7 minutes. Add broth, beans, chile peppers, salt and spices. Stir well. Bring to gentle boil then reduce heat and simmer 4 or 5 hours, stirring occasionally. Stir in cheese. Stir in corn. Simmer another half hour or so. Makes 12 1-cup servings.

    Have made this several times. I adjust the spices to suit my degree of spiciness for the event. It turns out well. I don't put the cheese in I use it as a garnish. This is the best white chili I have made. - 1/27/13

    I washed the beans before adding them to cut down on the sodium and didn't need to add the cheese. Cheese can be used as a garnish instead. Delicious!!!! - 11/10/11

    We have been making a similar recipe for years, but don't think you need the cheese either. When I sercve it for others I do offer the cheese (also, tortilla chips in the bottom of the bowl) BUT this soup is wonderful all on it's own! - 12/24/10
