vegetarian bean hot pot

Ingredients
2tbsps olive oil2 onions, sliced2 celery stalks, diced1 carrot, thinly sliced1 green bell pepper, chopped2tsps chopped fresh garlic1/2 - 1 tsps chilli powder420g can bake beans in tomato sauce400g can chopped tomatoes1/2 - 1 cup of vegetable stock or water150g button mushroom, sliced150g green beans sliced1/4 cup tomato paste1/4 cup chopped fresh parsley
Directions
1.heat oil in large saucepan, add onions & cook for 3 - 4 minutes, or until tender.
2. add celery, carrot, bell pepper, garlic and chilli, cook for a further 3 - 4 minutes.
3. add remaining ingredients and bring to the boil. reduce heat, cover and simmer for 15minutes. stir occasionally. serve over a bed of couscous or creamy mashed potato.

hint : for more intense flavour, try adding 1/4 cup red or white wine to the hot pot.
