Chicken Croquettes

Ingredients
4 cups shredded cooked chicken1 cup shredded cheddar cheese2 eggs 1/4 chopped onion1/4 cup seasoned breadcrumbs 2 tablespoons poultry seasoning
Directions
Combine all ingredients in a medium bowl.
Chill the mixture for at least 30 minutes.
Place a large skillet coated with cooking spray over medium-high heat.
Divide the mixture into 8 portions and cook for about five minutes per side, until the outside is crispy and the cheese has melted.
Serve with reduced-fat sour cream (calories not included).

    Very yummy and filling! If you are not sure what seasonings to use, I used 2 heaping tsp ranch seasoning mix, 2 tsp crushed red pepper, 2 tsp salt, and 1 tsp black pepper. My family dipped these in ranch dressing and hot sauce.

    This entree is tasty but extra flavor is needed. I threw in several cloves of garlic, some black pepper, and an orange bell pepper. Also, I didn't want to add the oil from frying, so I cooked this on my George Foreman grill. The results weren't pretty. The patties crumbled a bit but were very yummy. - 4/13/08

    I used a mix of canned chicken and shredded breast I had left over and a monterey cheddar mix and mrs dash garlic and herb seasoning...served with salsa and guacamole - 8/10/07

    This sound like a great recipe. But wouldn't the "nutrition info" be different depending on whether you used the flax or the psyllium or breadcrumbs? And the breadcrumbs; there are great differences in the nutrition of different kinds. I will measure each ingredient and figure it out myself. - 7/31/09

    My husband made these for our lunch today. Pretty good! We'd cook it again and add a tiny bit of fresh parsley finely ground for flavor. We used a store-baked chicken and threw out the bones, skin, and excess fat. My son liked it, too! - 3/26/09
