Crock Pot Honey Curried Lentils

1 lb extra-lean ground beef1 cup lentils 2.5 cups water3 cups cooked rice (I used minute rice the first time)2 tbsp honey2 tbsp soy sauce1 tbsp walnut oil1 clove garlic, minced1/2 tsp powdered ginger1/4 tsp onion powder1 tsp lemon & pepper saltsprinkle of crushed red pepper1 tsp cumin1.5 tsp curry powder
Brown the ground beef in a skillet, rinse or drain well. Combine with the rest of the ingredients (except the rice) in a small crock pot. You can use fresh onions instead of onion powder, but all I had was the powder. I also estimated the water, may have to use more or less depending on desired texture. Cook on low 4-5 hours. Add the cooked rice just before serving. Makes approximately 6 servings, 1 cup each.

I hate changing recipes, but is there a sub for the walnut oil? I really want to try this and that oil is kinda spendy. - 7/22/09

You can use any oil you like, olive or vegetable oil will work just fine. I used walnut oil because that was all I had.

This recipe is fabulous. I am trying to loose weight with a couple of work colleagues and I made this and brought it to work for lunch - we all really enjoyed it....but can someone please tell me how I can now get this into my Meal Planner? I have tried to find how, but haven't been successful. - 9/8/09

It's possible that when I selected 1 cup of lentils on spark's recipe calculator, it meant cooked, when I meant uncooked. Also, I use the lowest calorie choice for the ground beef, as I drain mine with hot water to remove any grease.
