Ingredients
1.5 C whole wheat flour100 grams baby carrots, shredded2 oz dried apricots diced1/2 C raisins1/2 C dried cranberries1 C rolled oats1 C unsweetened applesauce1 tsp each baking soda and baking powder2 tsp vanilla extract2 tbsp each sugar and brown sugar
Directions
Mix all ingredients in a large bowl. Scoop mixture into 1/4 cup servings. Roll dough into a ball, then flatten onto a cookie sheet sprayed with Pam. Bake at 400 for about 15-20 minutes, or until starting to brown. Makes 12 large cookies.
