Ingredients
Newman's Own Sockarooni Sauce 2.5 cup jar1 pound of cooked or uncooked shrimp2 pats Butter10 cloves Garlic, crushed.5 cup Mushrooms, slices or pieces.5 cup Onions, sliced or diced1 package Frozen Broccoli (Microwavable, preferably)(optional) Additional frozen veggies(optional) 3 Tbsp dried Basil (or chopped sprigs of fresh)(optional) Chopped peppers or dried chili flakes
Directions
Bird's Eye Steam-Fresh veggies make this a little faster prep, so if you have them pop it in the microwave. If you're cooking dry pasta, be sure to get it started boiling before prepping this part.
.
-Heat sauce in a separate pan.
-Add butter and crushed garlic to a hot skillet. Be sure to keep it moving to prevent burning the garlic. Add onion.
-Rough chop shrimp. Add to skillet and cook until pink. If pre-cooked, toss in skillet until well coated warmed.
-Add sliced mushrooms, cooked broccoli (and any additional or substitute veggies).
-Stir and add heated sauce and extra basil. If desired, add chili pepper flakes
-Simmer for 5 to 10 minutes, until desired thickness.
.
Notes:
-Make this low/no fat by eliminating the butter and using nonstick spray instead.
-You may need additional pasta sauce if you add a lot of extra veggies. By the way, mushrooms are great in this because they have a similar texture (meaty) as the shrimp. You could make this vegetarian by substituting 1/2 pound of beans for the shrimp and adding more mushrooms.
.
Serve with your favorite pasta or alongside a salad.
.
Makes 6 servings of .5 cup each.
