Tuna Muffins - Eat to Win

Ingredients
rice - cooked - brown or white - 4 cupspeas - cooked - 1 cupcorn - cooked - 1 cupmushrooms - raw - sliced - 2 cupsred onion - diced - 1 cupcelery - diced - 1/2 cupcarrots - raw - diced - 2 cupscauliflower - cooked - chopped - 2 cupsyogurt - plain - 0% fat - 400 grams/1-3/4 cupstuna - flaked in water - 2 cans/240 gramsmozza cheese - partially skim - shredded - 1 cup8 egg whites or 1 cup of egg substitute like egg beaters.salt and pepper to tastesoy sauce - 4 tsp
Directions
Makes 12 large heaping muffins.
Preheat Oven to 375 degrees F
Beat Egg Whites until stiff.
In a large bowl, hand mix all other ingredients together. Add the beaten egg whites into the mixture just to evenly distribute. Spray muffin tins with Pam. Fill large muffins tins heaping full and shape tops like muffins. Bake for approximately 45-55 minutes until tops are nicely browned.
Serve immediately.
