Creamy Chicken Noodle Soup

Ingredients
3 chicken breasts, diced1 cup diced carrot1 cup diced celery1 cup diced onion1 shallot, diced2 tbsp flour2 tbsp Extra virgin olive oil7 cups Natural Chicken Broth2 cups fat free half and half3 cups spiral pasta, uncooked2 tsp salt1 tsp pepper1 tbsp dried thyme1 tsp garlic powder
Directions
In a large stock pot or dutch oven, heat oil. Add chicken, carrot, onion, celery, and shollot on medium heat until chicken is cooked thoroughly. Add flour to pot, and cook until the flour is cooked into a smooth paste. Add the chicken broth, salt, pepper, thyme, garlic powder, and pasta. Boil until the pasta is cooked well and the veggies are tender. Add the fat free half and half, and continue to simmer 10 minutes.

Makes 8 1 1/2 cup servings.
