Cashew Chicken

Ingredients
2 lb chicken - boneless skinless - cubed3/4 cup Cashews3-4 green onions3 cups chicken broth2 tbs corn starch2 tbs soy sauce½ tsp sugarPepper & Pepper to taste3 cups of steamed rice.
Directions
Season chicken with a bit of salt and pepper and then fry in 1 tbs of olive oil.

For the sauce: Mix chicken broth, corn starch, soy sauce, sugar and pepper. Cook until thickened.

Serve chicken over rice and top with sauce, cashews and green onion.
