Skillet Ground Turkey Meatloaf

1 can of low fat Cream of Mushroom Soup(divided)1.5 pounds ground turkey1/2 cup italian breadcrumbs1 egg, lightly beaten1/4 cup chopped onion1 tsp salt1tsp pepper1tsp garlic powder1/4 cup water1/2 tsp prepared yellow mustard1/2 cup shredded mozzarella cheese, skim
Makes 6 servings
Mix 1/2 of the soup, all of the meat, breadcrumbs, egg, onion, salt , garlic powder, and pepper in a large bowl.
Shape 2 loaves.
Heat a large, deep skillet over a medium high heat.
Brown the loaves in the skillet then reduce the heat to medium.
Cover the skillet with the loaves still in it.
Simmer for 25 minutes or until the meat is cooked through.
Drain the fat from the skillet or spoon it out.
Stir in the rest of the soup, water, and mustard.
Top with the cheese, if using, and simmer for 10 minutes.
Stir the sauce occasionally while simmering.
