Spinach and Feta Brown Rice

Ingredients
1/2 cup chopped sweet onion2 tsp minced garlic2 cups cooked short-grain brown rice2 cups chopped fresh spinach leaves6 tbsp crumbled fat-free feta cheesesalt or pepper to taste (optional)
Directions
Lightly mist a small, nonstick skillet with olive oil spray. Set over medium heat for 30 seconds. Add the onion and garlic. Cook, stirring occasionally, for 4 to 6 minutes or until tender. Do not allow to brown. Add the rice and spinach. Cook, stirring constantly, for 3 to 5 minutes, or until the spinach is almost completely wilted. Stir in the cheese. Season with salt and pepper. Serve immediately.
