Cream of Broccoli Soup

Ingredients
Olive Oil - 1 tbspOnion - 0.5 cup, choppedBroccoli - 2 cups, choppedRed Potato - 100g (chopped)Carrots - 0.5 cup, grated Vegetable Broth - 2 cupsHeavy Cream - 2 tbsp (or lesser)Salt, Pepper and Red Chilli Flakes to taste
Directions
1. Heat Olive Oil, add onion and saute. Next add Carrots, Potato and Broccoli along with some red chilli flakes (if using). Saute this for a few minutes.

2. Add Vegetable Broth and after it comes to a boil, let simmer until vegetables become soft.

3. Take 3/4th or more of this mixture and puree.

4. Return to pan, add salt, pepper and cream to taste and simmer until heated through.
