Arabian Mixed Vegetables

Ingredients
3 Tbs olive oil1 onion, sliced1 bay leaf1 Tbs chopped fresh dill1/2 rib celery, finely diced1 potato, peeled and diced1 carrot, peeled and diced1 green apple, cored and diced2 tomatoes, diced2 small zucchini, diced1/4 head of cauliflower, divided into florets1 1/2 Tbs raisins (optional)1 1/2 Tbs walnuts (optional)
Directions
1. Heat oil and add onion.
2. Lightly fry onion until translucent.
3. Add herbs and all vegetables, and stir-fry for approximately two minutes.
4. Lower heat and simmer for 10 more minutes.
5. Stir in raisins and nuts (optional).
5. Remove bay leaf and serve.
