Ingredients
6 oz mushrooms, sliced2 oz green onions, diced2 oz spinach, raw6 oz tomatoes, diced4 oz green peppers, diced7 oz chicken, diced1 quart egg substitute1 oz parmesan cheese, shreddedMrs. Dash Table Blend
Directions
Cut up all your vegetables.

Preheat broiler.

Spray your oven-proof pan with Pam and saute the mushrooms. When the mushrooms are almost done, add the green onions for 1 minute. Then add the spinach, tomatoes, green peppers, and chicken. Stir and cook until spinach starts to wilt. Then add the egg substitute. Sprinkle with Mrs. Dash and Parmesan and cook until the sides start to separate from the pan.

Place the pan in the broiler for 5 minutes or until the top is brown.

Remove from pan promptly and let rest 5 minutes before serving.

Cut into 6 pieces and serve.
