Teriyaki Pork Lettuce Wraps

Ingredients
2 lb Pork Chops6 tbsp teryiaki marinade2 red bell peppers, sliced1/2 cup reduced fat peanut butter1/2 cup onions, chopped16 lettuce leaves, large
Directions
Cut pork into thin strips, combine with 4 tbsp teriyaki marinade in medium bowl. Toss to coat.

Spray large skillet with low fat cooking spray, add bell pepper. Stir fry 2 - 3 minutes on medium high heat until tender-crisp. Remove from skillet and set aside. Add pork to skillet and stir fry 1 - 3 minutes. Add peanut butter, onions, bell peppers and remaining marinade. Cook, stirring until mixture is evenly coated and heated through.

Spoon mixture into Lettuce Leafs, wrap and serve.
