Chicken Peanut Butter Stir Fry

2 units of chicken, cubed1 tbsp EVOO2 cloves garlic, minced1/4 cup red onion, chopped2 cups fresh spinach, coarsely chopped3/4 cup zucchini, chopped 1/2 cup carrots, sliced1/2 cup broccoli, chopped3 tbsp Szecguan Spicy Stir Fry Sauce2 tbsp Chunky style Peanut butter
makes 3 servings
1. heat oil in large wok or skillet pan on medium heat
2. add onion and garlic and chicken, cook until chicken is almost cooked through
3. Add other vegetables and stir-fry sauce, cook until vegetables are lightly browned or soft
4. Add peanut butter, stir around to coat all chicken and vegetables. Cook until peanut butter is creamy (1-2 minutes).
Serve Immediately
