Oatmeal-applesauce pancakes

1 cup rolled oats1/2 cup applesauce, plain*1 egg2 tablespoons maple or agave syrup1/2 cup yogurt - plain, low fat1/4 cup oat bran1/4 tsp baking powder, rounded1 tablespoon fiber - I use acacia fiberbutter or oil for pan
Combine all but the baking soda in a blender and puree into a smooth batter. Add baking powder and run slowly to combine.
Heat skillet over medium heat and add batter, about 2 tablespoons at a time. cook, flipping once, until golden brown and cooked through - about 2 minutes a side.
Makes about ten silver dollar pancakes.
These are very filling pancakes - a little goes a long way!
*Note: I commonly swap the applesauce out for ripe banana, crushed strawberries, etc. Whatever sounds good that morning!
