1 Arnold Sandwich thins, multi-grain1 oz lite ricotta cheese1/2 tsp. olive oilItalian seasoninggarlic powder1/4 c. chopped sweet peppers (yellow, green, red)1/4 c. finely chopped broccoli2 cherry tomatoes1/4 c. canned mushrooms1/4 c. Kraft fat-free mozzarella
Split the sandwich thin in half. Spread each half with half of the ricotta cheese and then half of the olive oil. Sprinkle with Italian seasoning and garlic. Divide the veggies among the sandwich halves and top with mozzarella. Bake at 400 degrees for about 10 minutes or until cheese is melted and lightly browned.
Makes 2 mini pizzas. They so low in calories you don't have to feel guilty about eating both!
