Cauliflower Cakes

1 16 oz bag frozen cauliflower1 egg1/2 cup shredded fat free mozzarella1/4 cup parmesan cheesesalt & pepper to taste1/4 tsp red pepper flakes1/2 tsp garlic powder1/2 tsp onion powder
Makes 4 cakes
Cook cauliflower until soft, about 8 minutes. Drain well then rice or smash really well. Mix all ingredients together in bowl. Shape mixture into 4 round patties and bake on baking sheet sprayed with olive oil spray for 10 minutes per side at 450 degrees.

I started with fresh rather than frozen, and maybe because of that, my mixture came out too thin to form into cakes. So instead I spread the mixture into a pie plate and baked it that way. It came out with a nice crispy edge/crust, so didnt look as nice as a cake, but still tasted really good. - 2/26/09
