Slow Cooker Chicken Enchilada Stew

Ingredients
1 Medium Onion Diced2 Stalks Celery Diced3 Medium Poblano Peppers1 Clove Garlic1 Tsp Ground Cumin1/2 Tsp Ground Coriander1/4 Tsp Cayenne Pepper or more to taste1 1/2 lb Chicken Breast w/o skin2 Can White Beans4 Cups Chicken Stock3/4 Tsp Dried Oregano1 Can HominySalt
Directions
Put all ingredients in slow cooker and set on low for 8 hours or high for 4 hours. Shred chicken before serving. Top with fat-free sour cream or light cheese(calories not included).
