Turkey & Wild Rice Supreme

1 cup wild rice cooked (instant)1/2 lb ground turkey 1/4 cup finely chopped onion1/4 cup finely chopped red pepper1/2 avocado - peeled, pitted & diced3/4 cup sliced mushrooms2 tbsp olive oil1 1/2 tsp dried crushed thyme1 tbsp dried chopped parsley1 tsp paprikasalt & pepper to taste
Cook rice as directed on the box (takes about 10mins from start to finish).
Finely chopped onion & red pepper.
Spray a pan with cooking spray and begin to saute turkey over medium heat. Add onion, pepper, and mushrooms and continue to cook until turkey is well browned. Reduce heat if necessary.
While turkey is cooking dice up the peeled & pitted avocado. Whisk together olive oil with thyme, parsley, paprika, and desired amount of salt and pepper.
Add avocado, rice & olive oil mixture to turkey. Mix thoroughly. Serve and enjoy!
