Ingredients
3-5 lb whole roasting chicken1 can tomato paste1 T chicken base1 can chicken broth1/4 cup brown sugar1 tablet Nestle Mexican chocolate Abuelita or 1 cup semisweet chocolate chips1/4 cup chili powder2 T ground cumin2 T cinnamon1/2 cup creamy natural peanut butter
Directions
Place all ingredients, except chicken in a crock-pot on high. Stir until chocolate begins to melt. Add chicken, cover and cook on high for 6-8 hours. It will be falling off the bone. Remove chicken to a platter and strain the sauce through metal strainer. Remove the fat from the sauce after it has separated. Check for saltiness and add more if needed. Get as much meat off the bones as possible. I serve this with warm tortillas, burrito style, with sour cream and shredded cheese, or over rice.
