South Beach Turkey and White Bean Chili

Extra Virgin Olive Oil)Onions, rough chopGarlic, mincedGround White TurkeyChili powderCumin powderCannellini Beans, 1 can drained and rinsedDiced Tomatoes with Green Chilles, 1 canChicken Stock
Heat oil in a large saucepan over medium-high heat.
Add onions and peppers and cook for 5 minutes.
Add garlic and cook for 1 minute more.
Add turkey, cook, stirring often, until turkey is no longer pink, about 5 minutes. Add Chili powder and Cuminand stir until turkey is evenly coated.
Add beans (drained and rinsed), tomatoes with juice, and stock; bring to a boil.
Reduce heat to medium-low, cover, and simmer until flavors blend, about 15 minutes.
Season with salt and pepper to taste and serve.

Measurements would be helpful. Mine turned out too soupy because I put too much chicken stock in. But, I got the spices just right & will probably never get it right again :) But LOVE THIS. Doubled what measurements were given, used minced onions and garlic salt (none fresh on hand) - 4/24/12
