Crockpot Sweet Potato Curry

Ingredients
4 chicken breasts2 sweet potatoes, cubed1 med onion, chopped2/3 cup orange juice1 can coconut milk1 tsp chicken bouillon2 tsp curry powder1 tsp red curry paste1/4 tsp pepper1/2 cup brown sugar1/4 cup shredded coconut
Directions
Place chicken, onions and sweet potatoes in crock pot. In separate bowl, mix all other ingredients. Pour over stuff in crock pot. Cook 6 hours on low, or 3 hours on high. Serve over rice. Nutrition info does not include rice.

    I used one half the sugar, no shredded coconut, lite coconut milk and also added garlic. Next time I would add some veggies at the end. Maybe some peas. - 4/15/09
