shredded (cooked) carrot salad

Ingredients
Carrots, raw, 2 lbs*Lemon Juice, .5 cupOlive Oil, 1 tbsp Honey, 2 tbsp Raisins, .5 cup, packed
Directions
Grate carrots (I use the larger size holes on a food processor). Steam the grated carrots (this can be accomplished easily by just microwaving in a 1 1/2 qt covered glass container). When carrots are cooked (soft), drain excess water (save for some other use--this is healthy stuff!). Mix in remaining indredients. Makes about 12 servings of 1/2 c each.
