light french toast

Ingredients
6 slices of light honey wheat bread3/4 cup egg substitute3 TB skim milk1 TB cinnamon1 tsp vanilla1 tsp sugar
Directions
Mix the last five ingredients together, then dip each slice of bread in the liquid mixture. Place the dipped bread on a griddle that is coated with cooking spray. Flip the bread to cook the other side.

I sometimes like to dust with confectioner's sugar, but topping the french toast with fruit is another delicious option.
