Black Java Beef Stew

3 lbs. lean beef.25 cup oil1 large onion.25 cup soy flour1 tsp salt.25 tsp pepper1.25 cup dry red wine.75 cup strong black coffee3 cloves garlic, minced.75 tsp dried thyme1 cup sliced fresh mushrooms
In a heavy pan, brown meat; remove meat from pan; pour off and reserve juices. Cook onion in hot oil.
Combine flour, salt and pepper, toss with browned meat. Return to pan; cook and stir to brown flour.
Add wine, coffee, garlic and thyme. Cover and simmer for 1.5 hours. Add fresh mushrooms and simmer an additional half hour. Remove cover and allow liquid to reduce to thicken, or if sauce is too thick, add reserved pan juices to thin.
