lemon herb salmon cakes

Ingredients
1 7oz. bonles skinless salmon1/4 C each chopped green or red peppers & green onions1/4 C light mayonnaise1 T. lemon juice1/4 T seasoned salt1 Lg. egg (beaten)1 C dry bread or corn flake crumbs
Directions
In bowl, gently flake salmon. Stir in chopped peppers and onions, mayonnaise, lemon juice, salt. Stir in egg and 4 Tble. of bread crumbs. Devide into 8 balls. Place remaining bread crumbs on a plate. Roll balls in bread crumbs and flatten into cakes, about 1/2 inch thick. Fry in lightly oiled skillet over medium heat until golden brown on both sides. 2 cakes is a serving.
