Baked Macaroni and Cheese

2 T. cornstarch1 tsp. salt1/2 tsp dry mustard1/4 tsp. pepper2-1/2 cups milk2 T. butter8 oz (about 2 cups) Barilla Plus Elbows2 cups 2% Milk Shredded Colby Jack Cheese
Cook elbows according to package directions.
Mix first four ingredients in pan, stir in milk and mix completely. Add butter and heat to boiling over medium high heat. Cook one minute after reaching a boil. Remove from heat and stir in shredded cheese.
Drain elbows and return to pot. Stir in cheese mixture. Turn into 8" baking dish. Top with bread crumbs and additional cheese if desired (not calculated in nutrition). Bake at 375 degrees for 25 minutes or until lightly browned.

SO YUMMY! I used skim milk & Cabot 50% reduced fat cheddar. Also reduced salt to 1/4 tsp. Took about 30 min. in the oven for me.
I felt like I needed to whisk the milk mixture constantly while cooking so it didn't burn to the bottom (but maybe not necessary?). Tried 2nd time w/wheat pasta. Yum!! - 6/20/09

You're right, you do need to stir or whisk continuously while heating the milk mixture. I do that so automatically I forgot to say it in the directions!
