Black Bean Salad

Ingredients
2 15-oz. cans black beans, drained and rinsed2 cups frozen corn, thawed1 large avocado, diced1 red bell pepper, seeded and chopped1/2 red onion, chopped1/4 cup chopped fresh cilantroFor the dressing: 1 tbsp. red wine vinegar4 tbsp. lime juice2 tbsp. olive oil1/2 tsp. pepper
Directions
Combine beans, corn, avocado, bell pepper, onion and cilantro in a large bowl. Whisk together dressing ingredients separately. Pour into the large bowl and toss to coat thoroughly. Chill and serve.

    I really liked this, but I think that next time I would add more of the sauce to it. Maybe double the sauce batch. My bf thought it was okay, he would eat it again, but didn't love it. However, knowing his tastes I wondered if he would like it at all. - 12/29/12

    Skipped the olive oil, red pepper, and corn... added fresh tomatoes... and some garlic powder... really yummy. Only used one can of beans. Next time, may add another avocado. - 9/3/10

    This was an okay meal. I liked everything but the cliantro. It is just to strong for me, so I would leave it out next time. Sadly my hubby didn't like it so I doubt I will be making it again. I also don't know if I would add so much lime juice to the dressing it was really tart. - 9/8/09
