Basic Tuna Salad

1 can of chunk white albacore tuna in water2 tbs. light mayo2 tbs. dijon mustard1 tbs. lemon juice1/2 c. diced celery1/2 c. diced red onion1/2 c. shredded or grated carrotSalt and pepper to taste.
Drain tuna very well. Combine all ingredients and mix well. Add either more mayo, lemon juice or mustard to achieve desired taste and consistency.
Serve whichever way you like your tuna.
Easy to change it up with olives or more mustard or dill easily. Also great with mustard powder.
