-3 CUPS LOW FAT HERBED CROUTONS-8OZ LIGHT MILD ITALIAN SAUSAGE-1 CUP DICED ZUCCHINI-1/2 CUP MINCED ONION-1/2 CUP DICED RED PEPPER-1 CUP PACKED LIGHT OLD SHARP CHEDDAR CHEESE-2 CUPS FAT FREE EGG SUBSTITUTE-1 CUP EVAPORATED 2% MILK OR LIGHT 5%CREAM-1/4 TSP SALT AND PEPPER
-SPRAY AN11X7'' CASSEROLE DISH WITH COOKING SPRAY. SPREAD CROUTONS EVENLY OVER BOTTOM OF DISH. SET ASIDE.
-SPRAY A MEDIUM, NON STICK SKILLET WITH COOKING SPRAY. REMOVE AND DISCARD CASING FROM SAUSAGE. BREAK OR CUT SAUSAGE INTO PIECES AN ADD TO SKILLET. COOK OVER MEDIUM- HIGH HEAT UNTIL NO LONGER PINK, BREAKING UP ANY LARGER PIECES. ADD ZUCCHINI, ONIONS, AND RED PEPPER. REDUCE HEAT TO MEDIUM. COOK AND STIR FOR 3 MINUTES, UNTIL VEGGIES SOFTEN.
