Quinoa, Sundried Tomatoes and Onion

1 Cup of Quinoa, rinsed well1/2 Cup of Chopped Onion2 tsp minced garlic8 Sundried Tomatoes, chopped2 Cups of Chicken Stock1 Tbsp OIl
Heat oil over med/high heat. Soften the onions, tomatoes and garlic for 3-5 minutes. Stir in the chicken stock and Quinoa, bring to a boil. Reduce heat to low and simmer for 30 minutes or until Quinoa has absorbed the liquid - usually less than 30 minutes.
Makes about 4 - 1 cup servings.

SALTYCHOCOLATE
This is an excellent basic recipe and it was just what I was looking for. I wanted something other than plain quinoa. I used veggie broth and added salt & pepper. Makes a great side dish and can be the basis for main courses and yes, as MoretA63 wrote, it lends itself to endless variations! - 4/13/11
